Well this is quite a question. I personally have never eaten bear that I liked. I have tried it about 4 or 5 times, and every time is was very tough, and somewhat greasy. I've always been told the best way to prepare bear is to place it directly on a nice piece of hickory, strap a quarter stick to it, set it off, and eat what's left. On a serious note, I've heard that cooking bear slowly for a long period of time in a crock pot is the way to go. It helps cook out some of the gamey flavor, gets rid of most of the toughness, and might not be too bad. I've also eaten bear sausage, and I can recommend preparing it in that way as well.
Yes, that's just like we offer cooking carp here. Bake it on a pine board for 4 hours with lots of hot sauce, then throw away the fish and eat the board.
The only reason I asked is because I read a book a while back about some men hunting for gold in the Rockies in the 1800's and they would kill bear to eat through the hard winters. I'm not anxious to eat one myself, but I would be willing to give it a shot.
